Chef Marilú Madueño Martínez

Marilú Madueño is the executive chef at Huaca Pucllana. She workswith native ingredients, creating and reinterpreting traditional andcontemporary Peruvian dishes. A graduate of Le Cordon Bleu in Paris, Chef Madueño furtheredher studies working in a number of renowned restaurants, including Taillevent in Paris and La Rosa Naútica in Lima.

This restaurant is unique. You will eat on the terrace that overlooks an actual pre-Inca archaeological site, built between 200 and 700 AD, and next to a 1500 year old adobe pyramid.

With a philosophy based on paying homage to the roots of Peruvian cooking, using the many superb ingredients available in the country including meat, fish, shellfish and an infinite variety of vegetables, the menus are an attractive mixture of tastes, aromas, textures and colors.

Visitors will enjoy contemporary interpretations of typical Peruvian dishes that make the best use of our extraordinary native ingredients.
