PAPA A LA HUANCAÍNA

Ingredients:
(serves 6 people)

  • 2 Pounds (1 Kg.) yellow or white potatoes

Sauce:

  • 14 oz of white fresh cheese
  • 1 can of evaporated milk
  • 2 yellow pepper (peruvian Aji Amarillo)
  • 2 garlic cloves
  • ¼ of an onion
  • Oil

Optional: Crackers

Sides and Garnishes:

  • 4 Hard boiled eggs split in half
  • 8 black olives
  • Lettuce leaves

Preparation:
Boil and peel potatoes, slice once they cool down.
Fry garlic, onions and peppers (without seeds)Once mixture cools, blend slowly adding cheese, milk , salt, creating a thick sauce.
Serve potatoes atop of the lettuce, pour sauce over potatoes and garnish with eggs and olives.
