PAPA A LA HUANCAÍNA
Ingredients:
(serves 6 people)
- 2 Pounds (1 Kg.) yellow or white potatoes
Sauce:
- 14 oz of white fresh cheese
- 1 can of evaporated milk
- 2 yellow pepper (peruvian Aji Amarillo)
- 2 garlic cloves
- ¼ of an onion
- Oil
Optional: Crackers
Sides and Garnishes:
- 4 Hard boiled eggs split in half
- 8 black olives
- Lettuce leaves
Preparation:
Boil and peel potatoes, slice once they cool down.
Fry garlic, onions and peppers (without seeds)Once mixture cools, blend slowly adding cheese, milk , salt, creating a thick sauce.
Serve potatoes atop of the lettuce, pour sauce over potatoes and garnish with eggs and olives.
